The best youth teams around here can shift, driven usually by coaching instructions from the sidelines. Outside of the premier (or gold) divisions, focus is on learning how to play the position.
Even in U12, we still see friendly games with only a center ref, so I am beginning to teach the central defenders when to keep a flat back and when one should drop.
